Cooking With the World’s Best

Two aspiring culinary students from MDC’s Miami Culinary Institute (MCI) will have the opportunity to study in Spain under the best chefs in the world as part of an exciting new apprenticeship.

Marcelo Sardina and Sachi Statz were recently selected to work under the famed Roca brothers of El Celler de Can Roca, which landed at No. 1 on Restaurant magazine’s influential World’s 50 Best Restaurants list this year.

As part of its three-year partnership with El Celler de Can Roca, BBVA through its U.S. subsidiary BBVA Compass is sponsoring the four-month culinary internships that will begin in January, including all travel and lodging costs.

Sardina and Statz were chosen from a group of 10 MCI students who assisted the Roca brothers and their staff in prepping meals for 200 BBVA Compass clients and invited guests aboard the SeaFair Miami, a luxury yacht on Biscayne Bay. These two standouts will work side by side with the internationally acclaimed Roca brothers: Head Chef Joan, Sommelier Josep and Pastry Chef Jordi Roca.

The internships include both hands-on and theoretical learning, an invaluable experience for any culinary student. Many who have apprenticed or worked for the Rocas have gone on to launch world-class restaurants of their own.

“This opportunity is priceless,” said Chef Collen Engle, MCI department chair. “To work and learn at the best restaurant in the world is a dream come true for these students. The internships further our mission and continued efforts to have a culinary school that is global in scope.”
